3 cups of Oats
1 cup of Almonds
1/2 cup of Pumpkin seeds
1/2 cup of Sunflower seeds
3/4 of a cup of Coconut flakes
1/4 of a cup of Brown sugar
1/2 cup of Raisins
1 tablespoon of Cinnamon
Wet ingredients mixture
1/4 cup of Vegetable oil
1/2 cup of Agave
1 tablespoon of Vanilla
1/2 teaspoon of Salt

Homemade vegan granola

As a vegan it’s unnecessarily difficult to find a good vegan granola. Most store bought granola contain honey or even milk! That’s why I decided to make my own homemade vegan granola. Not only could I control that it’s vegan, but I could control what goes in it as well. The amount of sugar and the different seeds and nuts. You can also control the flavour of your granola. I choose to add vanilla and cinnamon because I like those two together. It gives of this amazing smell while it’s baking in the oven!

Saturated

I like to eat this granola with a plant based yoghurt and warmed up fruit for breakfast. It makes sure I am full well until lunch. It gives me enough energy to start my day and it makes sure I’m the good kind of full until my next meal. This will make sure you don’t snack on empty calories between breakfast and lunch. You could even snack on a handful of the granola if you’re getting hungry. But I promise you that you won’t feel hungry after eating a bowl of this!

Meal prepping

This homemade granola is easy to prepare on a Sunday and it will last you well througout the rest of the week if you store it correctly in an airtight container or a glass jar. You can store it in several smaller containers for you to take to school or work. It doesn’t take a long time to make this recipe, since most of the time it’s in the oven and your house will smell amazing. If you have kids, ask them what flavours, seeds and nuts they want to add to their granola and let them help you prepare their own granola! I’m sure they will love it!

Mise en place

Preheat your oven to 120°C/250°F.
Roughly chop the almonds.
Line an oven dish with parchment paper. The easiest way to do this is by crumpling the parchment paper, you will see how easy it is to line the dish now.
Alternatively you could use a baking tray with a larger surface.

In a large bowl, add in all of the dry ingredients and mix.
In a seperate and smaller bowl mix together all of the wet ingredients.
Then combine those two together and mix until everything is well combined.

Put everything in the oven dish or the baking tray and spread the mixture out evenly.

Place in the oven for 1 hour and 20 minutes, mix through every 15 minutes or so.

Before storing and serving, let the mixture cool completely.
