Cut the flowers of the broccoli and peel of the outer layer of the stalk. Cut the stalk as well. Make sure they are somewhat the same size.
Peel the potatoes and cut these as well. You can change the amount of potatoes to your liking, all they do is make the soup creamy! So depending on how creamy you want your soup, use as little or as much potatoes as you like.
Peel the onion and cut into half rings. It doesn´t really matter how you cut it, it´s all going to get blended!
Peel the garlic, then chop the garlic. Again, use as much or as little garlic as you like!

Because I want this soup to be healthy, I´m not going to use any oil.
I use water instead!
In a large pot, heat up a splash of water and saute the onions and garlic until the onions are translucent. Add in more water if the pan gets too dry.
Then add in the broccoli, makin sure they don´t brown.

Then add in potatoes and the vegetable stock.
Make sure everything is covered.
Bring to a boil and then cook until the broccoli and potatoes are tender. You´re looking at 15 to 20 minutes of boiling.

When the broccoli and the potatoes are cooked, blend everything together until smooth.
You can leave it a bit chunky if you like that!
Taste and adjust to your liking.
