Ingredients
- 100 grams of Rice
- 4 leaves of Lettuce
- 2 tablespoons of Black beans
- 2 tablespoons of Corn
- 2 tablespoons of Salsa
- 3 tablespoons of Veggie mince
- half an Avocado
- 1 Tomatoes
- 1 tablespoon of Cucumber
- 1 teaspoon of Cilantro
- a pinch of Salt
- a pinch of Pepper
- 1 slice of Lime
- 4 slices of Pickled jalapeño
- 1 Red onion
- 1 tablespoon ofa Taco seasoning
Directions
Steps
1 Done | Cook your rice the way you would normally cook rice. Meanwhile, chop a red onion, the cucumber, a tomato and mash up the avocado. |
2 Done | To cook the veggie mince (I used store bought), heat up some oil in a pan and add the mince. Add in the taco seasoning and cook for around 5 minutes. |
3 Done | To make the guacamole: |
4 Done | Drain the beans and the corn. |

What is veggie mince ??
It’s a vegan replacement for minced meat. It’s usually made from soy or textured vegetable protein (also called TVP).
