Ingredients

Adjust Servings:
2 liters of Vegetable stock
1 Onion
4 cloves of Garlic
1 stalk of Lemongrass
A thumbsized piece of Ginger
A splash of Soy sauce
1/2 teaspoon of Sesame oil
2 stalks of Bok choy
250 grams of Ramen noodles
200 grams of Shiitake mushrooms
150 grams of Corn
2 stalks of Spring onions

Mise en place:
Peel the onion and garlic. Cut the onion and garlic cloves in half.
Peel the ginger and cut into slices or chunks.
With the back of your knife, crush the lemongrass.
Remove the stems of the shiitakes and cut into slices.
Cut the bok choi lenght wise.
Slice the spring onion.

To a large pot, add the vegetable stock, lemongrass, ginger, onion, garlic, shiitakes, soy sauce and the sesame oil.
Bring to a boil.

Once boiling, simmer the broth for at least 30 minutes.
Meanwhile, cook the noodles in a seperate pan.

After simmering, remove everything but keep the shiitake mushrooms because this will be garnish as well.
Then cook the bok choi in the broth until it's soft.

Serve in a bowl with some corn. You can add a little spice by adding as much sambal or another chili sauce.
