200 grams Vegan mince
2 heaping teaspoons Taco seasoning
8 Hard taco shells
2 Avocado
3 to 4 tablespoons Homemade pico de gallo
Optional: vegan cheese

Preparations

Prepare the homemade pico de gallo.
I use my homemade taco seasoning mix, but you can also use a store bought one.
Preheat the oven to 180°C/355°F, once warm heat up the hard taco shells according to the package instructions.

Guacamole

Mash the avocados using a fork or a potato masher. Add a few tablespoons of the pico de gallo, then set aside for later.

Vegan mince

Heat up some oil in a pan and cook the vegan mince. Add 2 heaping teaspoons of the taco seasoning (or as much as you want) and cook this until the mince is starting to get crispy,

Optional: Add a tin of diced tomatoes!

Assembling the tacos

Take your taco shell and first scoop in the vegan mince. Then add the guacamole.
Optional: Sprinkle some of the pico de gallo on top.
Optional: Sprinkle some vegan cheese on top.
