Ingredients

Adjust Servings:
500 grams of Gnocchi
2 handfuls of Fresh basil
30 grams of Pine nuts
1 tablespoon of Lemon juice
1 tablespoon of Extra virgin olive oil
3 cloves of Garlic
1 dollop of Vegan butter
1 teaspoon of Pepper
1 teaspoon of Salt

To make the pesto, add the basil, garlic, olive oil, lemon juice, pine nuts, salt and pepper for a food processor and blend until smooth.
If you want a cheesy flavour, add in some nutritional yeast but this is totally optional.

In a pan, heat up a dollop of vegan butter and wait until it's completely melted.
Add in the gnocchi and fry for around 10 minutes or until the outsides are brown and crispy.

Turn down the heat and stir in the pesto, 1 spoonful at a time.
