Boil a pot of water and pre-heat the oven to 200°C/390°F. Also line a baking tray with baking paper or a silicone mat.
Meanwhile, cut your potatoes into wedges. I like to leave the skin on, but you can of course take it of if you want to!

Parboil your potatoes for around 3 minutes. Check with a fork, they should not be hard anymore but not fall apart at the same time (I don't know if this makes sense to you).
Put the drained and parboiled potatoes in a bowl and let them steam for about a minute.

In a big bowl, add the potato wedges, salt, garlic powder, and smoked paprika.
Mix well with a spoon until every potato is covered. This will be easier if you leave a little bit of the cooking liquid of the potatoes in the bowl.
Then place them on the lined baking tray and spread out evenly. You don't want any potato pressing against the other, your potatoes won't get crispy.

Bake the potatoes for around 40 minutes and flip halfway through.
Serve with home made tzaziki.
