120ml of Rice vinegar
50 grams of Sugar
125ml of Water

2 Cucumbers
2 Chili
160 grams of Peanuts

The dressing

Place all of the dressing ingredients in a small saucepan and stir until the sugar is dissolved.
Bring to a boil.
Once boiling, turn the heat to low and let it simmer for about 5 minutes.
After simmering, let the dressing cool down.

While the dressing is cooling down you can prepare the other ingredients.
Slice the cucumbers in half and down the middle. Deseed with a spoon.
Slice into 1cm pieces and put in a large bowl.

Finely slice the chilis. You can choose to take out the seeds but I didn't. Put the sliced chilis in the bowl with the cucumbers.

Roughly chop the peanuts and place in the bowl with the cucumbers and chilis.

Add the cooled dressing and mix everything together. Eat as a side with your favourite dishes!
