- 4 cloves of Garlic
- A good pinch of Salt
- The juice of 1/2 a Lemon
- 120 ml of Sunflower oil
Mise en place
Peel the garlic cloves and cut of the wooden edge.
In a pestle and mortar, add the garlic and a pinch of salt. Crush until the garlic is a smooth paste.
Add the lemon juice and continue to crush and stir.
Add the oil really slowly at first. Make sure all of the oil is gone before you put more in. Keep stirring and crushing until you get the consistency you want. You're looking for a thick paste.
