Mise en place

Pre-heat the oven to 175°C/350°F.
Cook your rice according to package instructions.
Onion: Peel and dice. Set aside for later.
Garlic: Peel and finely chop. Set aside for later.
Red bell pepper: Cut off the top part and take out the seeds. Roughly dice. Set aside for later.

Making the Jack-o'-Lantern bell peppers

Grab your orange bell peppers and cut off the top. If they can't stand up on their own you should cut off a bit on the bottom as well but it's best you buy ones that can stand up.
Take out the seeds.
Draw a face with a knife but be very careful not to cut yourself. Kids, get an adult to do this please, do not attempt this on your own!
For the eyes: make little triangles with the points pointed towards each other.
For the mouth: cut from one side of the face to the other side of the face making a half-moon with the edges pointing up (think of a smiley face).
Make another line as the bottom "lip" doing exactly the same as the upper lip, but with a little space between them.
For the teeth: cut out little triangles. it doesn't really matter which way they go. I've done both sides and they roughly look the same.
Watch my YouTube video if this is unclear, but it's really self explanatory if you've ever seen a Jack-o'-Lantern.
The pieces that you've cut out can be used in the filling so you don't waste anything.
The top part with the stalk can be used as decoration on top of the finished peppers.

The filling (part 1)

In a large pan heat up some oil and sauté the onion and garlic until the onion is soft and translucent.
Then add in the vegan mince, if you don't have access to vegan mince you can simply omit this or use lentils or mushrooms!
Sauté for a minute and then add the taco seasoning. I make my own Homemade Taco Seasoning. Sauté.

The filling (part 2)

Add in the red bell pepper, the scraps from the orange bell peppers, the corn, and the kidney beans. Sauté for about 1 minute and then add in the cooked rice.
Mix in the rice and add the tin of diced tomatoes. Sauté for a couple of minutes and then taste to see if it needs more seasoning or salt.

Assembling

Fill in each Jack-o'-Lantern pepper with the filling. You can sprinkle over some vegan cheese if you want to!
Then bake in the pre-heated oven for 30-40 minutes.
The nutritional value is for 1 Jack-o'-Lantern.
