Preparations

Oven: Preheat the oven to the temperature on the package of the flatbread you use. (you could also make your own flatbread of course!)
Onion: Peel and slice. Then set aside for later.
Portobello mushrooms: Remove the stems and then slice. Also set aside for later.
Tomato: Remove the stem and chop or slice. This depends on your preference. Set aside for later.
Lettuce: Remove a few leaves from a head of lettuce and set aside for later.
Homemade tzatziki: Follow this recipe for the vegan tzatziki.
Homemade gyros spice mix: Follow this recipe for the homemade gyros spice mix.

The gyros

Heat some oil in a pan and add the onions. Sauté for a couple of minutes or until the onion is soft and translucent.
Then add in the mushrooms and carefully stir. Make sure not to break the mushrooms. If the pan gets too dry add in a little more oil or a splash of water. Sauté for about 3 minutes.
Add the homemade gyros spice mix and turn the heat to a medium-low. Keep stirring this for about 10 minutes. Again, if the pan gets too dry, add in a splash of water or some more oil.
Make sure not to burn the spices so keep an eye on it.

The bread and toppings

I used a storebought vegan flatbread which needed to be heated up in the oven for 1-2 minutes.
I take the flatbread and I add the lettuce, tomatoes, and the mushroom gyros. I topped it with my homemade vegan tzatziki.
This recipe makes 4 flatbreads. Nutritional values are for 1 flatbread.
