A pinch of Salt
A pinch of Pepper
1/2 tablespoon of Herbes de provence
1 tablespoon of Sunflower oil

Mise en place:
Bring a large pot of water to a boil.
Peel the potatoes, onion and garlic.
Cut the potatoes into small dices.
Chop the onion and garlic.
Deseed and chop the green bell pepper.

Parboil the potatoes. This will only take 3 to 5 minutes.
They should not be too soft but they also shouldn't be raw.
After parboiling, drain the potatoes and place on a plate lined with a paper towel.

Heat the oil in a hot pan and add the onion and garlic and the bell pepper.
Saute until the onion is translucent.

Add in the potatoes, salt, pepper and the herbes de provence.
Stir and leave on the heat for a couple of minutes.
Stir and leave again for around 15 minutes, or until the potatoes are brown and cooked.
