The dough
500 grams Flour / All-Purpose Flour
1 teaspoon Salt
1 tablespoon Sugar
1 sachet of 7 grams Yeast
125 grams Vegan butter
300 ml Unsweetened non-dairy milk
Spice mix
1 teaspoon Salt
2 teaspoons Nutmeg
2 teaspoons White pepper
1 teaspoon Smoked paprika
1 teaspoon Onion powder
1 teaspoon Ginger powder
1 teaspoon Garlic powder
1 teaspoon Coriander powder
Filling
600 grams Vegan mince like the one from Beyond Meat
2 - 3 tablespoons The spice mixture you just made
Other ingredients
Olive oil
Unsweetened non-dairy milk

Preparations

Weigh out all of the ingredients for the dough.
Cut the vegan butter into cubes.
Mix all of the spices together and set aside.

Preparing the dough part 1

You can make the dough by hand or using a mixer. I used a mixer. If you do it by hand it's best to do it in a large bowl. First mix the dry ingredients (flour, salt, sugar, and yeast) and then add the cubed vegan butter and mix that together with your hands until you get a crumbly dough. Then add the unsweetened non-dairy milk. Knead this for about 10 minutes or until a dough forms.

If you use a mixer, add the dry ingredients (flour, salt, sugar, and yeast) to the mixer with the dough hook attached. Mix those together. Then add the cubed vegan butter and mix until a crumbly dough forms. While the machine is running, slowly add the unsweetened non-dairy milk. Mix this until a dough forms. Knead for about 5 minutes. Then take it out of the machine and knead the dough into a ball.

Once you have your dough ball put a drizzle of olive oil in a large bowl and add the dough ball. Make sure the whole dough ball is covered in oil, this prevents the dough from drying out.
Then cover the bowl and let the dough rise for 1 hour.

Preparing the filling part 1

While your dough is rising you can prepare the filling. I used vegan Beyond Meat mince.
Mix the vegan mince together with 2 - 3 tablespoons of the spice mix you just made.

Preparing the filling part 2

Each sausage roll needs 30 grams of filling so weigh out portions of 30 grams.
Once you have all of your portions it's time to shape them.
First roll them into balls and then roll them into sausages, approximately the size of your palm.
Repeat this with the rest of the filling until you have 20 sausages.

Preparing the dough part 2

After an hour of rising take the dough out of the bowl.
Each sausage roll needs 40 grams of dough so weigh out portions of 40 grams.
Shape all of the dough portions into balls.

Assembling the sausage rolls

Now you have all of your portioned out dough balls and sausage fillings.
Roll the dough out into oval shapes and place a sausage in the middle.
Roll in the two short edges and then roll in both sides and make sure the seam on the bottom is closed.
You can press and shape them a bit until you're happy with the sausage rolls.

Rising

Place your sausage rolls on a tray lined with baking paper, I could fit 10 rolls at a time but this depends on the size of your oven of course.
Brush them with unsweetened non-dairy milk and let them rise for 1 hour.

Baking

Preheat your oven to 220°C/430°F
After your sausage rolls have been rising for an hour, and before you put them in the oven, brush them a second time with some more unsweetened non-dairy milk.
Then bake them in the oven for 10 minutes, or until golden brown.
Nutritional values are for one sausage roll.
